Something like this might help: Living Among Meat Eaters I haven't actually read it myself, but I have always heard good things about it for exactly your situation. But without having to get a book before getting some ideas, these are my thoughts:
- serve your meals with lots of side dishes you can fill up on - cook the meat separate (if you can't get out of serving it) so you're essentially making one meal, but you'd focus on the "side dishes" and your fiancé would focus on the meat
- talk to your fiance, maybe you can come to an agreement that dinners will be veg by default - if they absolutely must have meat on a given night, they can prepare it themselves to accompany the rest of the meal, right?
Okay, I guess that's all I have. Though there are many subtle variations on those two. I'd definitely recommend talking to them, though. You need support from them too, not just us! (though especially at first, you might get more support from us, it's true...) Also, a cookbook recommendation that might help: The Vegetarian Meat and Potatoes Cookbook
