Potato-Kale Soup Submitted by Dragonfly
I threw this together from what I had in my garden and leftover in the fridge. This is what I came up with.
8 cups vegetable stock 7 Russian Banana Fingerlings, cubed (you can use whatever potato you want) 1 cup cannelini beans (I used fresh, but you can use canned) 1 large leek, sliced 1-14 oz. can of tomatoes, with juice 1 bunch of kale, sliced up (maybe half a pound?) 1 carrot, shredded 1 bay leaf 1 1/2 teaspoons cumin salt and pepper to taste
Put the stock, potatoes, leeks, and beans, bay leaf, and cumin in the pot. Let simmer until the beans and potatoes are nice and soft (but not mushy), about an hour if simmering on low heat. Add tomatoes, shredded carrot, kale, salt and pepper and simmer for another 10-15 minutes. Serve up with some whole grain bread and wine!! Yummy!!
This recipe is my own creation. I had potatoes and cannelini beans from my garden and kale, carrots, a leek, and part of a can of tomatoes leftover in the fridge so I just threw it all together with some seasoning and this is what I came up with! And I have some leftover for lunch this week!
