Tofu Fruit Whips

These are dessert-like if you add sweetener and more breakfast-like if you omit it.

Strawberry or Peach:

1/2 lb fresh strawberries or peaches
12 oz tofu, chilled
2 Tbs sweetener
chopped nuts or sunflower seeds (optional)

Zingy Banana:

2 small bananas, ripe
6 oz tofu
juice of 1/2 of a lemon
1-2 Tbs sweetener
1/2 tsp tahini (optional)
dash o' nutmeg (optional)

Banana Raisin:

2 bananas, ripe
1/4 cup raisins
6 oz tofu
1 tsp sweetener
1/4 cup toasted wheat germ
dash o' nutmgeg (optional)

What you do:

Throw everything but the nuts or sunflower seeds in a blender and whizz until smooth. Top with nuts / sunflower seeds (optional) and serve right away or use to top waffles or pancakes.

Each recipe serves 2-3 people.
