Banana Pudding
- a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- an overripe banana
- 1 tablespoon vanilla
- 1/2 - 2/3 cup sugar, depending on how sweet the banana is
- dash salt
Stick everything in a food processor and puree. To make strawberry banana or blueberry banana add 1/2 cup berries.
Vanilla Pudding - a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- 1 tablespoon vanilla
- 2/3 cup sugar
- dash salt
Stick everything in a food processor and puree. Add your favorite fruit as desired.
Maple Pudding - a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- 1 teaspoon vanilla
- 1/2 cup brown sugar
- scant 1/4 cup maple syrup
- dash salt
Stick everything in a food processor and puree.
Chocolate Pudding - this one is originally from Joanne Stepaniak's Vegan Vittles - a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- 1 teaspoon vanilla
- 2/3 cup sugar, or less
- 1/3 cup cocoa powder
- dash cinnamon
- dash salt
Stick everything in a food processor and puree.
Chocolate Pudding 2 - this one is mine - a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- 1 teaspoon vanilla
- 2/3 cup sugar, or less
- 1.5-2 ounces melted Baker's unsweetened chocolate squares
- dash cinnamon
- dash salt
Stick everything in a food processor and puree.
Gunk - a 12.3 ounce box Mori-Nu tofu, firm or extra firm
- 1 tablespoon vanilla
- 1/2 cup sugar
- 1 overripe banana
- 1/2 cup peanut butter
- dash salt
- Separately - 1/2 cup semi-sweet chocolate pieces melted with 1 tablespoon vanilla soymilk and 1 tablespoon earth balance
Stick everything except the chocolate in a food processor and puree. Pour into bowl. Fold in chocolate so it forms ribbons in the pudding.
