1 large over ripe banana
1 cup vanilla soymilk
4 slices stale bread of your choice (crusty bread works well, so does cinnamon raisin bread)
Puree first 3 ingredients in blender. Pour into pie plate. Soak bread. Heat a skillet and melt some Earth Balance in it. When it is hot add bread. Fry on both sides. Remove from pan and top with leftover batter or maple syrup.
