2 1/2 cups water 3/4 cup millet, rinsed 1/4 cup amaranth 1/2 tsp cinnamon 1/8 tsp salt few pinches ground cardamom (I don't like cardamom and usually leave it out or sometimes I use cloves) few pinches allspice 1 cup plain or vanilla non-dairy milk 1/4 cup raisins (I like dried cranberries) Stir together everything except the "milk" and raisins in a saucepan over medium-high heat. Bring to a boil, making sure to stir occassionally. Turn the heat to low and cover and cook for 20 minutes. Stir in the "milk" and raisins and increase the heat slightly. Cover. Cook for an additional 10 minutes, stirring occasionally. It's ready to eat. If you want it thicker, cook it without the lid for a couple more minutes. Sweeten with maple syrup, if desired.
