we were watching the sox game last night, so we threw together some salsa made of whatever we had on hand. turned out pretty tasty. I don't know that I'm a baseball fan, but I am a salsa fan!
1 large can of whole stewed tomatoes, drained and diced 1 medium red onion, coarsely chopped 3 cloves of garlic, minced 1 green pepper, coarsely chopped handful of cilantro juice of 1/2 a lime salt to taste hot pepper/hot sauce to taste a dash of balsamic vinegar
over medium heat, sauté garlic, onion, and pepper with a little bit of olive oil until the onion and garlic start to caramelized. turn off heat and add diced tomato, cilantro, and seasonings. stir until everything is quite mixed. Pop in freezer for a few minutes if you want to eat it right away, or chill in the fridge for a few hours before serving.
Because of the sweetness of the caramelized vegetables and balsamic vinegar and the hotness of the hot sauce (I used RAW HEAT and some asian chili sauce, both were pretty damn hot), it gives it a nice rounded flavor base and tastes like fajitas.
