I originally was given this recipe from a friend online(non-vegan), but I've since seen it on vegweb and apparently a non-vegan recipe was used by Paula Dean on the Food Network. (I'm not sure who to give the credit to on this one)

It's hard to tweek a 3 ingredient recipe, but it turned into 4 when I used flax seeds instead of regular ol' egg replacer.

1 cup turbinado sugar
1 cup peanut butter
1 TB ground flax seeds
3 TB water

preheat oven to 350º
Mix flax seeds and water until kind of frothy. Mix in sugar and peanut butter.

Shape into balls and place on a ungreased cookie sheet. Press with fork (you know, that traditional criss crossy action on PB cookies.)

Bake anywhere from 8-20 minutes. Depending on your oven and the size of your...err...balls (?) it will take less or more time. KEEP A CLOSE EYE ON THEM! they burn particularly easily!!

For what they are, easy PB cookies, they are delightful, but rather sweet. If you don't like super sweet things, I'd not make this recipe. It's almost like eating fudge, in richness, not texture.

I made these last night, but they burned because I was off doing some other things while I waiting for some guests to arrive. We ate them anyway and I still have a few left over.

Makes 15-18 cookies, depends on the size of your balls Crazy
