Cactus marinara

This is an easy addition to standard pasta sauce that gives a distinctive texture without imposing a bizarre flavor.

1 c marinara sauce
2 tsp olive oil
minced garlic
1/2 c nopales (cut, skinned cactus pads)
2 tbsp sliced black olives
1/2 c onion

Sautee onion and garlic in a small saucepan until onions are translucent. Add nopales. Cook until onions brown. Add marinara sauce and olives.

Serve over gnocchi, penne, or tri-colored rotini.
