We had these for breakfast this morning. Instead of making a breakfast burrito my husband wanted to have a breakfast quesadilla. It was yummy. This is his original recipe.
Breakfast Quesadillas
A couple of handfuls of frozen hash brown potato shreds A couple of mushrooms, chopped 1/2 red bell pepper, chopped 3 scallions, chopped 1/4 cup chopped zucchini About a cup of vegan cheese 3 tortillas
Saute the mushrooms, bell pepper, scallions, and zucchini in a bit of water (only a few tablespoons) in a non-stick pan. If you don't have a non-stick pan, use a dab of oil to saute in. When they are soft and the saute liquid is evaporated, add the potatoes and cook until browned. Take your tortillas and put some cheese on half and put the potato mixture over the cheese. Top with more cheese. Fold the tortilla over and brown on both sides. This is the only place I use a bit of oil because it gives the tortilla a nice golden color, but it doesn't take much.
