All-American Cheez Sauce

I just made mac and "cheese" with this recipe and it is awesome, and very simple! Great comfort food..
Adapted from Joanne Stephaniak's _Ultimate_Uncheese_Cookbook_
2 1/4 cups water or plain nondairy milk
1/2 cup cooked chopped carrots or winter squash
1/2 cup nutritional yeast flakes
1/2 cup flour (any kind)
1 T olive oil or nonhydrogenated vegan margarine (optional)
1 T fresh lemon juice
2 t onion powder
2 t salt
Blend everything in the blender until smooth, and no orange flecks are left. Bring to boil in medium saucepan, then on medium until thick and smooth, stirring constantly with wire wisk.
I used soy milk, the carrots, and the oil, and poured mine over macaroni noodles but the book also suggests using it on veggies, potatoes, casseroles, and veggie burgers. I think it would be great on a baked potato or over broccoli.
