I adapted this recipe from Breaking the Food Seduction. I made a couple of adjustments to the original recipe to suit my restrictions right now and this is what I came up with.
Slow-Cooker Whole Grain Breakfast submitted by dragonfly
1/3 cup brown rice 1/3 cup millet 1/3 cup pearled barley (original recipe called for kamut, spelt, or wheat berries) 3 1/2 cups hot water (next time I might try a little more water - close to 4 cups) 1/2 cup raisins and dried cranberries (whatever dried fruits you have would work just fine) 1 teaspoon cinnamon 1/4 teaspoon salt
Combine everything in the crockpot before bed and cook on low the whole night. Serve it in the morning with your choice of soy milk or rice milk (I used vanilla rice milk - yum!).
