This recipe is adapted from 1001 Cookie Recipes by Gregg Gillespie. Whoopie Pies
submitted by valerie 2 cups all purpose flour 6 T carob powder 2 t baking powder 1/2 t salt 1/3 C veg shortening 1 C powdered sugar 1 large egg 1 cup milk 1 t creme de cacao 1/2 C white chocolate chips
Filling
3/4 C veg shortening 1 C powdered sugar 1 t coffee liqueur 1/2 C store-bought marsmallow topping
Preheat oven to 375. Grease 2 baking sheets.
Combine dry ingredients. In a separate bowl cream shortning and powdered sugar. Beat in egg, then milk and creme de cacao. Gradually blend in dry ingredients. Fold in chocolate chips.
Drip by heaping T 3" apart onto baking sheets. Bake 7-10 minutes. Cool throughly.
To make filling, beat shortening and sugar together then add liqueur and marshmallow topping.
Cut cookies in half horizontally. Spread filling liberally in between.
