This tapioca pudding is yummy - if you love tapioca pudding like I do!

Tapioca Pudding

2 cups vanilla rice milk
1/2 cup tapioca
1/4 cup maple syrup
1/8 teaspoon salt
1 teaspoon vanilla extract or paste

Combine everything except the vanilla extract in a pan. Let it sit for 5 minutes. Over medium heat bring mixture to a full boil. STIR CONSTANTLY!! Once it's reached a full boil, remove from heat and add the vanilla. This tastes best chilled and thickens to a perfect consistency as it sits in the fridge.
